I finally got a bit of time recently (a total miracle!) to catch up with Country Living and I found the most amazing array of Christmas cocktails on their website. They’re absolutely perfect to beautifully type up, print out and gift with one of our G&T boards, neon G&T boards, tipple trays or shot glass trays.
After some very responsible testing, here are my favourite two recipes from there. Trust me they’re divine!
White Christmas Mojito from Half Baked Harvest
INGREDIENTS
juice of 1 lime
8 leaves of mint
1 tablespoon of sugar
2 tablespoons of white rum
1 tablespoon of coconut rum
60ml canned coconut milk
sparkling water for topping
pomegranate seeds for serving
INSTRUCTIONS
In a glass, muddle the lime juice, sugar and mint leaves until the leaves have broken down. Fill the glass halfway with ice.
In a blender, combine the white rum, coconut rum, and coconut milk and pulse until smooth. Pour over the ice and stir to combine. Top with sparkling water, mint and pomegranate. Drink!
Raspberry Limoncello Prosecco from Damn Delicious
This one literally couldn’t be easier!!
INGREDIENTS
710ml prosecco, chilled (annoying as there are 750mls in a bottle..... what a shame!)
240ml limoncello liqueur, chilled
125g frozen raspberries
6 sprigs fresh mint
DIRECTIONS
In a large pitcher, whisk together prosecco and limoncello.
Serve over raspberries, garnished with mint, if desired.
